Follow this easy recipe to learn how to bake a cake that's sure to impress your loved ones. 🎉 Recipe: 3 eggs Salt to taste 1/2 cup (100 g) sugar 2/3 cup (100 g) dried cranberries, soaked in boiling water for 10 minutes 1/2 cup (120 g) butter, melted 2/3 cup (150 g) Greek yogurt 1/3 cup (50 g) almond flour Zest of 1/2 lemon 1 tbsp lemon juice 1 cup (140 g) flour 2 tsp (8 g) baking powder Filling: 1/2 cup (80 g) walnuts, toasted and chopped 1 apple, grated 1 cup (250 g) cottage cheese 1 egg 2 tbsp sugar 1 tsp vanilla sugar 1 tbsp (20 g) cornstarch Preparation: Beat the eggs with salt and sugar. Add the soaked dried cranberries, melted butter, Greek yogurt, almond flour, lemon zest, and lemon juice. Add the flour in portions, then mix in the baking powder and the remaining flour. Line a baking pan with wet parchment paper. Spread half of the batter into the pan. Prepare the filling: toast and chop the walnuts, grate the apple, and mix with the drained cranberries. Spread this apple, nut, and berry layer over the batter. In a separate bowl, mix the cottage cheese, egg, sugar, vanilla sugar, and cornstarch. Spread the cottage cheese layer on top.
