Glazed Lemon Knot Cookies Welcome to Mary'sKitchenMtl! Today we are making glazed lemon knot cookies. We will mix the ingredients using a stand mixer. *You may use a hand mixer. In a large bowl add: • 6 large eggs at room temperature • 1 cup (200g) granulated sugar Beat for 2 minutes on medium speed. While mixer is running add: • 1 cup (215ml) sunflower oil or oil of your choice • The zest and juice of 1 large lemon • 2 teaspoons (10ml) of pure vanilla extract Continue beating for 2 minutes on medium-high speed • In a large bowl, sift 4 ½ to 5 cups of all-purpose flour *BEST TO WEIGH THE FLOUR (should weigh 620g) *More flour will be needed later for dusting. • Add 1/4 teaspoon (2g) of kosher or sea salt • Add 4 teaspoons (16g) of baking powder Mix. Add the flour mixture in gradually and continue beating on low speed. Once batter begins to thicken, remove beaters and mix in the remainder of the flour with a rubber spatula. Dust your work surface with flour and transfer the dough. Continue dusting the dough with flour and begin kneading. As you dust the dough with flour and knead, it will become less sticky. The oil in this recipe makes the dough very manageable, though keep in mind that egg size can affect the texture of the dough. If needed, add more flour a sprinkle at a time until it is no longer sticky and manageable. Shape into a ball. Cover with plastic wrap and refrigerate for 30 minutes. After 30 minutes, remove from the refrigerator, unwrap and cut it into 4 equal parts. Roll each piece into a 16 inch (41cm) long rope and then cut into 8 equal pieces. Roll each piece about 6 inches (15cm) long and 1 inch (3cm) in diameter. Shape into a knot. Place the cookies on a tray lined with parchment paper. Preheat your oven to 350 degrees F. (177C). In the meantime, continue shaping the cookies. Bake 1 tray at a time. Bake for 20 minutes on bottom rack. Remove from the oven and let the cookies cool on your counter. While they are cooling, prepare the lemon glaze. You will need: • The juice of 2 large lemons. • Add 4 cups (500g) of powdered sugar in a large bowl Add the lemon juice gradually while mixing. Dip the cookies in and place them to dry on a cookie sheet lined with parchment paper. This recipe produces 32 light, soft and super delicious cookies that will melt in your mouth.
