কাপাসিয়া উপজেলা বাংলাদেশের একটি কৃষিভিত্তিক গ্রামীণ জনপদ, যেখানে গজারি বন এবং মাটির নান্দনিক বাড়িঘরের মাঝেই গড়ে উঠেছে কৃষকদের জীবনধারা। এই অঞ্চলে ধান, সবজি ও সরিষার পাশাপাশি প্রায় ছয় মাস ধরে চলে আখ চাষ এবং আখের গুড় তৈরির কর্মযজ্ঞ। এই ভিডিওতে আমরা দেখার চেষ্টা করেছি কীভাবে মাঠের আখ থেকে রস বের করে ঐতিহ্যবাহী পদ্ধতিতে গুড় তৈরি করা হয়। বিশেষ করে মহিষের গাড়ি দিয়ে টেনে আখ থেকে রস বের করার প্রাচীন প্রযুক্তি—যা এখন প্রায় বিলুপ্তপ্রায়। দুটি মহিষকে বৃত্তাকারে ঘুরিয়ে আখ মাড়াই করে রস বের করা হয় এবং সেই রস মাটির বড় চুলায় জ্বাল দিয়ে তৈরি করা হয় পাটালি গুড়। বর্তমানে অধিকাংশ কৃষক জেনারেটরচালিত মেশিন ব্যবহার করে আখ থেকে রস বের করেন, যা সময় ও শ্রম কমায়। তবুও কাপাসিয়ার কিছু অঞ্চলে এখনো টিকে আছে এই ঐতিহ্যবাহী পদ্ধতি। এই ভিডিওতে আমরা তুলে ধরেছি— ✔️ মহিষচালিত আখ মাড়াই প্রক্রিয়া ✔️ জেনারেটরচালিত আধুনিক পদ্ধতি ✔️ মাটির চুলায় গুড় তৈরির ধাপ ✔️ কৃষকের শ্রম ও গ্রামীণ অর্থনীতি বাংলার হারিয়ে যেতে বসা এই শিল্পকে ধারণ করাই আমাদের এই প্রয়াস। Kapasia Upazila in Gazipur District is a rural agricultural region of Bangladesh surrounded by sal forests and traditional mud houses. Along with rice and vegetables, sugarcane cultivation and jaggery production continue here for nearly six months every year. In this video, we explore the traditional process of jaggery making from sugarcane juice. One of the most fascinating aspects of this documentary is the buffalo-driven sugarcane crusher — a nearly extinct traditional technology. Two buffaloes rotate in a circular motion to crush sugarcane and extract juice, which is then boiled in large earthen furnaces using bagasse as fuel to produce natural jaggery. While most farmers now use generator-powered machines for faster production, this traditional method still survives in some rural corners of Kapasia.
