Place 2 seeded butternut pumpkin halves cut-side up on a lined baking tray. Halve and core 1 apple and place in the pumpkin cavities. Halve 1 unpeeled brown onion and add to the tray. Roast at 180°C for 1 hour or until tender. Cool slightly, then scoop the pumpkin, apple and onion from their skins into a saucepan. Add 4 cups (1L) chicken or vegetable stock and blend with a stick blender until smooth. Reheat over medium heat, then divide among serving bowls.
