Ramadan Vlog: Somali Food + SOUR daiquiri
Today I made the best Somali food ever!!! Here's the recipe, thanks to @nasra_abtidoon for the recipe: Somali meat & rice In a bowl wash rice add water and let it soak for 2 hours 1) In a pan, add meat (preferably leg or shoulder) + black pepper powder + salt + water till you cover meat. Cook for 1-2hours till soft and tender. 2) In a pan, add oil, 1 sliced red onion, cook till brown. 3) Xawaash recipe (somali seasoning) - In a pan add 1tbsp coriander seeds, 1tbsp cumin seeds, black peppercorn, cinnamon stick, cardamon pods, turmeric powder = roast for 2 mins (don't let it burn) 4) In a pestle & mortar add a handful coriander & 5 garlic cloves= stomp till paste formed 5) In a pan, add oil, 1 sliced red onion, cook till brown. 6) Add 1 tbsp Xawaash & 1 tbsp coriander and garlic paste =mix 7) Add turmeric in a bowl with water = mix and pour in the pan 8) Add a little water and mix till oil separates 9) Add rice and mix - let it fry for a 1-2mins 10) Add hot water and let it cook for 5 mins on high and 10 mins till soft. 11) Add raisins and red food colour + cook for 5 mins more then its ready 12) Once the meat is ready, add oil, 1tbsp coriander/garlic paste and turmeric/water mix 13) Add saffron soaked in water, garlic + onion powder + vegetable seasoning + yellow onion slices = cover + for 5 mins then its ready! 14) Slice potatoes, wash and add some red food colouring + fry with a little oil Shigni (Somali chilli sauce) 1) In blender add 1 red onion, 10 green chillies, 1 garlic clove, 5 tbsp lemon juice, black pepper powder and salt then blend & serve. Bur/Mendazi 1) 2 cups of flour, 1 cup sugar, 2 tbsp yeast= MIX (with hands) 2) Add 3 tbsp melted ghee or unsalted butter + 1 cup of warm milk = mix with a fork 3) Then transfer on table with flour and keep turning in the dough till soft then cover with a little oil, let it sit for 30-1hr 3) Roll out the dough, cut it into 4 parts, grab 1 and roll out and cut into triangles (not too thin) 4) In pan add oil, heat it up then add the triangle dough, keep stirring till brown on both sides then remove from oil and dust caster sugar and serve with honey and a cuppa. Malawah 1) In a bowl add 2 cups flour + 1 egg + a cup of sugar + little milk + salt = use a hand whisk and mix slowly till smooth consistency 2) Add little oil on pan, pour in the mix and move it around the pan. 3) Add oil to the sides and when brown, serve with sugar.
