Today, I'm going to show you how to prepare a delicious and easy Provençal-style vegetable recipe, where each vegetable is cooked separately to guarantee perfect results. Ingredients: 1 red onion 2 bell peppers (1 red, 1 yellow) 5 zucchini 20 cherry tomatoes Fresh thyme 2 cloves of garlic Salt Pepper Espelette pepper Recipe steps: Preparing the ingredients: Thinly slice the red onion into petals. Cut the bell peppers into petals after removing the seeds. Slice the zucchini into rounds. Wash the cherry tomatoes. Chop the garlic cloves. Cooking the Vegetables: Red Onion: In a pan with a drizzle of olive oil, sauté the red onion over medium heat with a splash of water until translucent. Bell Peppers: Add the bell peppers to the pan with the unpeeled garlic clove and sauté until tender and slightly caramelized. You can add a splash of water to help them cook. Zucchini: In a separate pan, cook the zucchini with a little olive oil and the unpeeled garlic clove, turning them so they brown on both sides. Cherry Tomatoes: Add the cherry tomatoes to a pan and cook for 1 minute, turning them occasionally, until they begin to burst. Seasoning: Once all the vegetables are cooked, combine them in a large pan. Add the fresh thyme, salt, pepper, and a pinch of Espelette pepper. Gently mix to combine the flavors.
