This time, I followed Mr. Yoneda, a chef who has poured his passion into creating what may be the ultimate chashu. Every morning, he prepares the pork with handmade shio koji, a special sake mixture, and a custom-made pot designed only for chashu. Each piece is simmered slowly for hours, turned by hand, and finished with a rich sauce until the flavor soaks deep into the meat. What moved me most was not only the tenderness of the chashu, but Mr. Yoneda’s endless curiosity. Even while running, watching TV, or going home after work, he says he is always thinking about chashu.
