cook #WithMe In this no chop recipe video Charity shows you how you can make risotto even when you can't find Arborio rice in the supermarket. Bonus - it involves a lot less stirring, minimal compared to traditional risotto. You can change this recipe to suit your own tastes. It should work with any flavour combination you'd like. Ingredients: small amount of oil 1 heaped cup frozen diced onion or 1 large onion, diced 500g chicken, diced 1kg pumpkin/sweet potato (or similar) 2 cups Brown Rice and Quinoa mix OR Arborio rice if you can find it at the supermarket! 5 cups Chicken Stock, salt reduced 1/2 - 1 cup grated Parmesan cheese (to your taste) Pepper to taste Serve with other vegetables - for example, cooked green veggies.
