Dhaba Style Paneer Kasuri Methi | Creamy, Rich & Loaded with Flavour | Chef Ajay Chopra Portions serving: 4-5 pax Preparation time: 05 mins Cooking time: 50 mins Ingredients: For Base Gravy: Oil 1 tbsp Bay leaf 1½ pc Cinnamon ½ inch Onion 4 pcs Cashew nuts soaked 10-12 pcs Add water as required Coriander stems 10-15 pcs For Paneer Kasuri Methi: Oil 1 tbsp Jeera 1 tsp Ginger & garlic paste 1½ tbsp Kasuri methi 1 tbsp Prepared base gravy Salt 1 tsp Black pepper ½ tsp Kitchen king masala 1 tbsp Fresh cream 1 tbsp Paneer grated 100 gms Paneer (cut into triangles) 250 gms Coriander chopped 1 tsp Method: Step 1: Prepare the Gravy Base Heat oil in a pot and add bay leaf and cinnamon. Sauté for a few seconds until aromatic. Add the onions and cook on medium heat until they soften and begin to sweat. Add the soaked cashew nuts and enough water to cover the ingredients. Let the mixture boil gently until the onions become completely soft and the cashews are tender. Add the coriander stems and simmer for another minute to infuse their flavour into the gravy. Switch off the flame and allow the mixture to cool completely. Step 2: Blend the Smooth Gravy Transfer the cooled onion and cashew mixture to a blender. Blend until you get a smooth, creamy paste without any lumps. If required, add a little water while blending to achieve a silky consistency. Keep the prepared gravy aside. Step 3: Prepare the Tempering Heat oil in a pan and add jeera. Allow it to crackle and release its aroma. Add the ginger-garlic paste and sauté on medium flame until the raw smell disappears and the paste turns aromatic. Step 4: Cook the Kasuri Methi Gravy Add crushed kasuri methi to the pan and sauté briefly to release its flavour. Pour in the prepared gravy paste and mix well. Cook on medium flame, stirring occasionally, until the gravy thickens slightly and develops a rich, creamy texture. Add salt, black pepper powder, and kitchen king masala. Mix well and continue cooking until the flavours are well combined. Step 5: Add the Paneer Add the grated paneer and mix it into the gravy. The grated paneer gives the curry a rich, restaurant-style texture and body. Next, add the paneer triangles and gently coat them with the gravy. If preferred, the paneer triangles can be lightly pan-fried beforehand for a firmer texture, though fresh paneer works equally well for a softer bite. Step 6: Simmer the Curry Allow the paneer to simmer in the gravy for 1–2 minutes. This helps the paneer absorb the flavours of the creamy gravy while remaining soft and tender. Avoid overcooking, as paneer can become chewy if cooked for too long. Step 7: Final Finish Add fresh cream and gently stir it into the curry. This enriches the gravy and gives it a smooth, luxurious finish. Taste and adjust the seasoning if required. Step 8: Garnish & Serve Transfer the hot Paneer Kasuri Methi to a serving dish. Garnish with chopped coriander, a drizzle of fresh cream, and a little rogan if desired. Serve hot with lachha paratha, naan, roti, or pulao for a rich and comforting meal.
