👍 Whelk and Somen Ingredients 1 can (400g) Yudong whelk 200g Somen noodles 1 cucumber 1 green onion 1 small onion (or 1/2 large onion) 10 perilla leaves A handful of shredded dried pollack 1 tablespoon sugar 1 tablespoon corn syrup 2 tablespoons plum extract 1 tablespoon brewed soy sauce 3 tablespoons vinegar 1 tablespoon minced garlic 1 tablespoon fine red pepper powder 1.5 tablespoons gochujang 1 tablespoon sesame oil A little sesame seeds 0.5 ~ 1 tablespoon vinegar Ice water 👍 Whelk and Somen Recipe 1. Put water on the stove first and prepare the sauce. 2. 1 tablespoon sugar, 1 tablespoon corn syrup, 2 tablespoons plum extract, 1 tablespoon soy sauce, 3 tablespoons vinegar, 1 tablespoon minced garlic, 1 tablespoon fine red pepper powder, gochujang 1. Add 1.5 tablespoons and 1 tablespoon of sesame oil and mix. 3. Add 3 tablespoons of the canned whelk liquid to the seasoning sauce. 4. Soak the dried pollack in the remaining whelk liquid, and let the seasoning sauce mature in the refrigerator for a while. 5. Thinly slice 1 small onion and slice 1 cucumber lengthwise. 6. Slice 10 perilla leaves not too thinly, and julienne 1 green onion, then soak it in cold water to remove the spiciness. 7. Cut the whelks into halves or thirds to allow the seasoning to penetrate well. 8. Add 200g of somen noodles to boiling water and cook them. Add about 0.5 to 1 tablespoon of vinegar, and when the water boils, add cold water while cooking the noodles. 9. Rinse the cooked somen noodles in cold water first to remove the steam, then rinse them once more in ice water to cool them down. After thoroughly washing away the starch, drain the water. Remove. 10. Add the whelk, shredded dried pollack, onion, cucumber, and shredded green onion to the aged seasoning sauce and mix well. Taste, then add perilla leaves and sesame seeds to finish. 11.
