Dishes with eggplant represent freshness, summer, and coziness – and this recipe is perfect for any season. 📌 Tip: If you like it more varied, you can add mushrooms, use ricotta instead of cheese, or add some chili for spice. 👍 Like the video 🔔 Subscribe to the channel 📩 Share the recipe with friends who love eggplant! 📌 RECIPE: Ingredients 2 eggplants Salt, black pepper Italian herbs Dried garlic Olive oil 1 tomato 3 cloves garlic Parsley 70 g cheese 2 tbsp mayonnaise 4 eggs (separate the yolks from the whites) Some cheese and parsley for the egg mixture For the Vegetable side dish: 1 red onion Olive oil 2 potatoes Salt, black pepper 1 carrot 1 yellow bell pepper Fresh parsley 👩‍🍳 Preparation: Halve the eggplants and scoop out the flesh with a spoon. Season with salt, pepper, Italian herbs, and garlic, then drizzle with olive oil. Chop the eggplant flesh and mix with the tomato, garlic, parsley, cheese, and mayonnaise. Fill the mixture into the eggplant halves. Separate and whisk the eggs, mix with salt, parsley and some cheese. Pour over the eggplants. Bake in the oven for 40 minutes at 180°C (350°F). For the side dish: Sauté the onion in olive oil, then add the potatoes, season and cook over medium heat. Then add carrots and finally the peppers. Fry everything until golden brown and garnish with parsley. ✨ In the end you will have a complete dinner: stuffed baked eggplants with cheese and vegetables, accompanied by a colorful vegetable pan.
