A Cosy Winter Day | Frosty Walks, Meal Planning & Slow Living

Let's spend a cosy winter in England. We embrace slow living, frosty walks and the simple pleasures of the season. In this episode I am meal planning, browsing charity shops, enjoying cosy coffee moments and preparing a comforting winter recipe for dinner. Thanks for watching 🤍 Cher _______________________________ Root Vegetable Gratin Recipe: 2 medium potatoes, peeled and thinly sliced 2 carrots, peeled and thinly sliced 1 parsnip, peeled and thinly sliced 1 small sweet potato, peeled and thinly sliced 2 tablespoons olive oil 2 cloves garlic, minced 1 cup heavy cream 1 cup grated cheese (Gruyère or cheddar) Salt and freshly ground black pepper, to taste Fresh thyme or rosemary sprigs for garnish (optional) Instructions: Preheat the oven to 180°C (350°F) and grease a baking dish with olive oil. In a bowl, combine the heavy cream, garlic, half of the cheese, salt, and pepper. Mix well until the cheese is melted and the sauce is smooth. Arrange the sliced vegetables in a spiral pattern in the prepared dish. Pour the cream sauce evenly over the vegetables. Sprinkle the remaining cheese on top and bake for 40 minutes covered with foil. Remove the foil and continue baking for another 20 minutes until golden brown.
