SUBBIE SUPPER Submitted by Sierra CAJUN SAUSAGE AND CHICKEN PASTA —Ingredients— •2 chicken breasts (cut into cubes) •1 pack Cajun sausage (andouille) • bacon (optional) but bacon is delicious on everything •1 bell pepper diced fine • 1-2 tbs minced garlic or 3 cloves fresh • 1 onion (whatever kind you prefer) diced fine • 1 pack tortellini • Cajun seasoning • Mrs. dash hot and spicy • 1 stick of butter • 1 pint of half and half or heavy cream • 2 cups Parmesan cheese • 1 1/2 cups sharp cheddar cheese —Directions— •Of course prepping everything first makes everything easier so I start there. Make sure the sausage is cut into small bite size pieces. • Start by letting the chicken marinate in Cajun seasoning mrs dash and salt and pepper (not too much salt since most Cajun seasoning is very salty) as long as you can but at least an hour. Cook in a skillet until cooked through (I use 1tbs or more if needed of butter to cook it in!) Let chicken rest on a plate off to the side. • Add more butter to pan and throw onion and bell pepper into the same skillet and cook all the way through add garlic toward the end. Take out veggies and set them with the chicken. Salt and pepper to taste you can throw in some Mrs dash in the veggies also • Crisp up sausage (in same pan with all the drippings of chicken and veggies for the flavor) take out and set with the chicken and veggies. • Next we start on Alfredo sauce. Add the half and half or heavy whipping cream the rest of your stick of butter and add in your cheeses salt and pepper Cajun seasoning and mrs dash ( I basically eyeball the seasonings and taste as I go keep in mind it will be spicy so make sure it’s just how YOU like it!) and all the chicken veggies and sausage cook on medium or medium low until it thickens. • Boil tortellini as directed on package once done drain and add to your Alfredo sauce •Top with more cheese and you can crumble bacon on top if you want we like it with garlic bread.
