Tender cactus paddles (nopales) meet tangy guajillo chile and slow-cooked onion in this classic Mexican dish. It’s vibrant, briny, and packed with flavor — great on tacos, with grilled meats, or as a side salad. The secret is in curing the nopales to remove the slime and balancing it all with a warm vinegar-chile marinade. ──────────────────────────── NOPALES CON GUAJILLO YIELD: 1 QUART For curing the nopales: 630g nopales, cleaned and julienned 20g kosher salt For the guajillo marinade: 100g olive oil 160g white onion, julienned 20g garlic, thinly sliced 10g guajillo chiles, seeded, stemmed, and cut into thin strips 170g apple cider vinegar 15–20g sugar ──────────────────────────── CLEANING NOPALES *Trim:* Cut off the base and edges. *De-spine:* Lay flat and scrape off all thorns and bumps with a knife held nearly flat. *Rinse:* Wash well under cold water to remove sap and fine spines. *Cut:* Slice or julienne as needed. ──────────────────────────── CURE THE NOPALES Toss the nopales with the salt in a bowl and let sit at room temperature for 1 hour. Rinse thoroughly and strain until the mucilage (“boogers”) are gone. ──────────────────────────── BUILD THE BASE In a large pan, heat the olive oil over medium heat until shimmering. Add the onions and cook slowly until lightly caramelized. ──────────────────────────── TOAST AROMATICS Add garlic and guajillo chile strips. Cook until fragrant and lightly toasted — don’t let the garlic brown too much. ──────────────────────────── COMBINE Add the cured nopales and sauté until they turn from bright to muted green. ──────────────────────────── FINISH Add vinegar, salt, and sugar. Bring to a gentle simmer while stirring, then turn off the heat and let cool at room temp. ──────────────────────────── MARINATE Store covered in the refrigerator. Let marinate at least 1 day before serving. Taste daily.
