The pork belly is cooked sous vide for hours in a water bath, giving it its incomparable juiciness. The Thermomix mixing bowl serves as a water bath. Simply fill the pork belly with the sauce into the vacuum bag, seal it airtight with the vacuum sealer, and then place it in the water bath. When seared, the pork belly doesn't lose its juiciness, remains buttery tender, and the rind becomes irresistibly crispy.
