Resep Nasi Uduk Betawi Komplit Dengan Semur Tahu Telur & Sambal Kacang

Betawi Uduk Rice Ingredients & Seasonings 1.5 liters of rice 0.5 coconut, squeezed into 1.5 liters of coconut milk 6 stalks of lemongrass 10 bay leaves 3 finger lengths of galangal 2 index fingers of ginger Method: 1. Crush the ginger, lemongrass, and galangal 2. Add the coconut milk, ginger, and lemongrass. Put the galangal and bay leaves in a saucepan. 3. Bring to a boil, then add the rice. 4. Wait until the coconut milk is dry and dry. Let it cool for 45 minutes. 5. Steam the rice for 1.5 hours until cooked through. 6. Remove and set aside. Semur Tofu, Egg, and Tempeh Ingredients & Seasonings 4 eggs 125g tempeh 10 tofu cubes 3 cloves garlic 5 shallots 1 stalk lemongrass 1 cinnamon stick 4 cloves 2 finger lengths of ginger 2 finger lengths of galangal 2 bay leaves 250g sweet soy sauce 1 tablespoon coriander Method: 1. Puree the onion and coriander. 2. Crush the ginger and galangal. 3. Sauté the ground spices until fragrant. 4. Add the lemongrass, ginger, and galangal. 5. Add the cloves and cinnamon. 6. Add 450ml water. 7. Add the soy sauce and stir well. 8. Add the eggs and tofu and tempeh. 9. Cook until boiling 10. Let stand for 30 minutes 11. Remove and set aside Balado Potatoes Ingredients & Seasonings 2 diced 3 cloves garlic 5 cloves shallots 2 bay leaves 20 cloves red chilies Salt and seasoning to taste Method: 1. Blend the onions and chilies 2. Fry the potatoes until cooked 3. Sauté the ground spices, add the bay leaves, salt, and seasoning 4. Once the spices are cooked, add the potatoes 5. Stir well 6. Remove and set aside Fried Vermicelli Ingredients & Seasonings 1 package vermicelli 1 tsp pepper 3 cloves garlic 2 cloves shallots 2-3 tbsp soy sauce Green onions and celery to taste Method: 1. Boil the vermicelli until cooked 2. Finely grind the onion and pepper 3. Mix the vermicelli and soy sauce. Mix well. 4. Sauté the spices, add the spring onions and celery. 5. Add the rice noodles and stir well. Tempeh Mendoan Toppings 3 cloves of garlic 1 finger-length turmeric 2 candlenuts 250g tempeh 250g flour 300ml water Green onions to taste Salt and seasoning to taste Methods 1. Finely grind the garlic, turmeric, and candlenuts. 2. Add the spices to the flour and mix well with the spring onions. 3. Add 300ml water. 4. Season the tempeh with the mendoan seasoning. 5. Fry until cooked and golden brown. Peanut Sauce Ingredients and Seasonings 20 red chilies 5 bird's eye chilies 2 shallots 1 clove of garlic 150g peanuts Methods 1. Boil the ingredients until cooked through. 2. Grind all ingredients with salt and seasoning. 3. Grind with the peanuts until smooth. 4. Mix with the water and stir well.
