My mother used to make these potato waffles with mashed potatoes but this time I decided to make the potato waffles with grated potatoes. Pinterest:   / secretsintheove   Ingredients: • 2 medium potatoes • 2 eggs • 150 g mozzarella • Salt • Pepper • 1 green onion • fresh parsley Step 1: Grate the potatoes and add them in boiled water. Let them rest for 5 minutes. Step 2: Drain the grated potatoes and then squeeze them. Step 3: Add the beaten eggs and the grated mozzarella and mix until well-combined. Season with salt and pepper. Step 4: Cut 1 green onion and the fresh parsley and incorporate them into the potato mixture. Step 5: Bake in the preheated waffle maker for 10 minutes.
