Pierniczki are very traditional spiced cookies in Poland, especially for the Christmas season. Although they can be bought year-round these days, at the end of November, people start making them at home, often as a favorite activity with children, who knead, cut, and decorate them in countless shapes. These are then decorated and finally stored in jars to be served on the Christmas Eve table as one of the twelve main Christmas dishes. The spice mix for Pierniczki consists of cinnamon, ginger, cardamom, anise, cloves, nutmeg, allspice, and black pepper. Although these cookies contain many spices, they are often referred to as gingerbread cookies. In Poland, one city is very famous for its Pierniczki: Toruń.
