🟢食材: 雞腿肉 300克 蟲草花 20克 冬菇 25克 紅蔥頭、薑各適量 🟢醃料: 鹽 1/4茶匙 糖 1茶匙 生抽 1茶匙 老抽 1茶匙 蠔油 1茶匙 澱粉 2茶匙 紹興酒 1/2湯匙 胡椒粉 適量 🟢做法: 1️⃣ 冬菇泡軟切片。蟲草花洗淨去蒂。 2️⃣ 雞腿肉切塊,加入醃料和薑絲、紅蔥頭拌勻,加入冬菇和蟲草花,蟲草花留少許放雞肉面,醃15分鐘。 3️⃣ 將雞肉均勻鋪平在蒸碟內,不要重疊,鋪上剩餘的蟲草花。水滾下鍋大火蒸10至12分鐘,如果火力強可蒸10分鐘。 🟢Ingredients: Chicken thigh meat - 300g Cordyceps flower - 20g Dried shiitake mushrooms - 25g Shallots, ginger - as needed 🟢Marinade: Salt - 1/4 teaspoon Sugar - 1 teaspoon Light soy sauce - 1 teaspoon Dark soy sauce - 1 teaspoon Oyster sauce - 1 teaspoon Cornstarch - 2 teaspoons Shaoxing wine - 1/2 tablespoon White pepper powder - as needed 🟢 Cooking Directions: 1️⃣ Soak the dried shiitake mushrooms until softened and slice them. Wash and remove the head of the Cordyceps flower. 2️⃣ Cut the chicken thighs into pieces and mix with the marinade, ginger, and shallots. Add in the sliced mushrooms and Cordyceps flower, leaving some Cordyceps flower for later use . Marinate for 15 minutes. 3️⃣ Arrange the chicken evenly in a steaming dish, avoiding overlapping.
