Perfect for busy weekdays or a relaxing weekend lunch, this combination brings the true taste of Gujarati households to your kitchen. #gujaratidalbhat #gujaratithali #dalbhatrecipe #mothkisabji #kerinisambharo #kitchenseries #minithali #gujaratifood #noonionnogarlic INGREDIENTS: • A cup of Basmati Rice (बासमती चावल) • Wash with Water (पानी से साफ़ करे) GUJARATI DAL • 1.25 cup of Water (पानी) • ½ cup Oily Tuvar Dal (तुवर दाल) • A cup of Water (पानी) • ⅛ tsp Turmeric (हल्दी) • ½ tsp Salt (नमक) • 2 to 3 Garlic Caves (लहसुन) • Half inch Chopped Ginger (अदरक) • 3 tsp Oil (तेल) • ½ tsp Mustard (राय) • ½ tsp Cumin (जीरा) • Cinnamon, Cloves (दालचीनी, लौंग) • Dry Red Chilli, Badiyaan (सुखी लाल मिर्च, बादियाँ) • Curry Leaves (कड़ी पत्ते) • ⅛ tsp Hing (हिंग) • Chopped Tomato (टमाटर) • ½ tsp Red Chilli (लाल मिर्च) • ¼ tsp Garam Masala (गरम मसाला) • ⅛ tsp Salt (नमक) • Half glass Water (पानी) • Chopped Green Chilies (हरी मिर्च) • Roasted Peanuts (शिके हुए मूंगफली दाने) • Kokum (कोकम) • Chopped Coriander Leaves (हरा धनिया) • 1 tsp Sugar (चीनी) • Half Lemon (निम्बू) SPROUTED MOTH SABJI • A cup of Sprouted Moth (अंकुरित मोठ) • 3 tsp Oil (तेल) • ⅛ tsp Hing (हिंग) • Chopped Green Chilli, Ginger (हरी मिर्च,अदरक) • ½ tsp Red Chilli (लाल मिर्च) • ¼ tsp Turmeric (हल्दी) • ½ tsp Coriander Cumin (धनिया जीरा) • ½ tsp Salt (नमक) • ¼ cup Water (पानी) KERI NI CHHAL NO SAMBHARO • A Mango (पक्का आम) • 2 nos. Green Chilies (हरी मिर्च) • 2 tsp Oil (तेल) • ½ tsp Mustard (राय) • ⅛ tsp Hing (हिंग) • ¼ tsp Salt (नमक) • ½ tsp Sugar (चीनी) • 1 tsp Besan (बेसन) METHOD: 1. Basmati Rice: Clean, wash, and boil the Basmati rice until light and fluffy. 2. Twist Gujarati Dal: Pressure-cook the washed oily tuvar dal with water, turmeric, salt, ginger, and garlic. Mash thoroughly. Heat oil, add mustard seeds, cumin, cinnamon, cloves, dry red chili, badiyaan, curry leaves, and hing. Throw in the chopped tomatoes and spice powders, then pour in the cooked dal. Bring it to a boil with green chilies, roasted peanuts, kokum, sugar, and lemon juice. Garnish with chopped coriander. 3. Sprouted Moth Sabji: Heat oil in a pan, add hing, green chilies, and ginger. Toss in the sprouted moth, add red chili, turmeric, coriander-cumin powder, and salt. Sprinkle a little water, cover, and steam until cooked but firm. 4. Keri ni Chhal no Sambharo: Thinly slice the mango skins and green chilies. Heat oil, toss in mustard seeds and hing. Add the mango skins, chilies, salt, and sugar. Sauté for 2 minutes, sprinkle besan over it, and stir until toasted and well coated.
