Light Sallou with Thermomix™5 Sallou, or sfouf, or tkawate, is a very rich and energizing Moroccan delicacy, mainly eaten during the month of Ramadan or on occasions such as baptisms. After sharing several sallou recipes with you in my Chef Latifa recipe channel, here's a recipe with zero fat, which is good for your health and makes sallou lighter. All the steps in preparing this sallou are done in the ThermomixTM5 robot. Ingredients • 125g of whole wheat flour, Finot type. • 125g of white cake flour. • 200g of brown sugar. • 250g of sesame seeds, washed, dried, and dust-free. • 250g of whole almonds with skin. • 1 to 2 tbsp of anise seeds. • Cinnamon sticks. • A few seeds of gum arabic. Preparation Place the almonds in the bowl and set for 30 min/120°C/reverse/speed 1, then set aside. Place the sesame seeds in the bowl and set for 20 min/120°C/reverse/speed 1, then set aside. Place the two flours in the bowl and set for 55 min/120°C/speed 1. Add one sachet or 1 tablespoon of bitter cocoa powder, then set aside. Place the cinnamon, anise, gum arabic, and sugar in the bowl and set for 25 sec/speed 10. Add the almonds and sesame seeds and set for 5 sec/speed 7. Set aside a little of this mixture for crunch. Then mix for 1 min 10 sec/speed 10 to ensure the almond and sesame oil is well released. Add the flour and set. 30 sec / speed 10, stirring with a spatula. Add the crunchy mixture and cook for 1 min / reverse / speed 4. Serve and garnish to taste.
