Mix 150g icing sugar, 70g flour, 100g ground almonds, and a pinch of salt. Add 5 egg whites, 2 tsp rosewater, and then the butter. Let the batter rest for 1 hour, pour into molds, add 1 or 2 raspberries and 40g chopped pistachios, then bake for 15 to 18 minutes at 180°C (350°F). • PINK RASPBERRY MADELEINES Whisk 5 egg yolks, 2 whole eggs, and 130g sugar. Add 140g melted butter, 180g flour, 8g baking powder, 2 tsp rosewater, 1 tbsp honey, the zest of one lemon, a pinch of salt, and a little pink food coloring. Let the batter rest for 1 hour, fill the molds, and add ½ tsp... Place a spoonful of raspberry jam in the center, sprinkle with 30g of crushed pistachios, and bake for 10-12 minutes at 180°C (350°F). • LEMON LIME FONDANT Whisk 3 eggs with 180g of sugar, add 180g of melted butter, 80g of Greek yogurt, the zest of 2 lemons and 2 limes, 40ml of lemon juice and 20ml of lime juice, then fold in 220g of flour, 8g of baking powder, and a pinch of salt. Bake for 18-22 minutes at 170°C (325°F), then brush with 50ml of slightly warmed lemon juice and 25ml of slightly warmed lime juice. • ORANGE BLOSSOM MUFFINS Mix 280g flour, 120g sugar, 11g baking powder, and a pinch of salt. Whisk 2 eggs with 100ml oil, 120ml milk, 3 tbsp orange blossom water, and the zest of 2 oranges. Combine the two mixtures without overmixing, then bake for 20-23 minutes at 180°C (350°F). Once out of the oven, brush with 100ml orange juice mixed with 2 tsp orange blossom water. • ALMOND, PISTACHIO, AND LEMON CANTUCCINI Mix 300g flour, 180g sugar, 1 tsp baking powder, a pinch of salt, 3 eggs, 1 tsp... 1 teaspoon vanilla extract, the zest of one lemon, 120g almonds, and 80g pistachios. Shape into two logs, bake for 25 minutes at 170°C (340°F), slice, and bake for another 8 minutes on each side. • ORANGE BLOSSOM SHORTBREAD COOKIES For the shortbread: 300g flour, 100g icing sugar, 150g cold butter, and a pinch of salt. Add 1 egg, 1 egg yolk, and 2.5 tablespoons orange blossom water. Let the dough rest for 2 hours, cut out the cookies, cool them again, and bake for 12 to 14 minutes at 170°C (340°F). • VIOLET FLOWERS Mix 300g flour, 100g icing sugar, 150g cold butter, 8-10 powdered crystallized violets, and a pinch of salt. Add 1 egg and 1 egg yolk. Let the dough rest for 2 hours, cut out shapes, let cool, bake for 12-14 minutes at 170°C (340°F), then decorate with crystallized violets. • LEMON SHORTBREAD Whisk 200g butter with 100g icing sugar. Add 1 egg yolk, the zest of 2 lemons and 2 limes, 1 tablespoon of each juice, and a pinch of salt. Then, fold in 250g flour and 50g cornflour. Let rest for 1 hour, form into balls, flatten them, bake for 12 to 14 minutes at 170°C (340°F), then sprinkle with zest-infused sugar. • ORANGE BLOSSOM ALMOND TUILES Mix 3 egg whites with 100g of sugar, add 40g of flour, 30g of melted butter, 120g of slivered almonds, and a pinch of salt (with a little lemon zest or orange blossom water if desired). Spread very thinly on a baking sheet, bake for 7 to 10 minutes at 170°C (340°F), then immediately shape the tuiles on a rolling pin before letting them cool.
