Here I'll be sharing my daily life as a food blogger in Thailand, showing what I cook for lunch and dinner on typical days, my shopping, notes about local produce, herbs, and Thai dishes and ingredients, sharing my culinary opinions on food topics, Thai seasonal and cultural experiences and more. Knead the dough a little. 3) Once the dough is evenly mixed, wrap it up and flatten it into a square about 1 cm thick. Leave in the refrigerator for about an hour. 4) I cut it with a knife into 10 or 12 long strips pieces, working quickly before the butter softens. Make a holes with fork in each piece. 5) Bake in an oven preheated to 160°C for 30 minutes. ✨ Pumpkin Soup = pumpkin + dashi broth + carrot + potato + leek + salt + spices of your choice I just chop everything, place in a smart blender and press SOUP mode. ✨ Carrot Laffe • Ingredients: 1 carrot 1 tsp sea salt 1 tsp honey 1 tbsp EVOO any spices • Cooking Method: Julienne the carrots. Add salt, mix, and let sit for 20 minutes. Then squeeze it out. Add the rest of ingredients to your taste. Mix. Serve and enjoy! ✨ Pumpkin Salad-Spread Steam 1/4 part of medium sized pumpkin. Mash it in a purée. Add mayonnaise and salt. Saute chopped onions on olive oil until soft, add curry powder to your taste, stir and cool. Add to te pumpkin purée. Mix it well and enjoy. ✨ Homemade Bread with Mayo and Leek • Ingredients: 300 g wheat flour 10 g of sugar 5 g of salt 5 g dry yeast about 250 ml of warm water • Cooking Method: 1) Combine all the ingredients. Knead the dough. Cover with a damp cloth and leave at room temperature for about an hour. 2) Divide the dough into 4 or 6 pieces. Let it rest for 10 minutes. Then shape it round or as a baguette. Let it rest and rise. 3) After the dough has risen for the second time, make a cut on the top of each piece. 4) Then bake it in the oven, preheated to 190°C, for 20 minutes. 5) You can spread some chopped finely leek and mayo mix on the top of baked bread and bake for 5-10 minutes more to 175°C for glossy look and more flavour (optional) 💡For glaze I use finely chopped leek, mayonnaise and a bit of unsalted butter. ✨ Yogurt Pancakes and Apple Slices Mix yogurt, flour and sugar to get runny batter. You can cook pancakes of it or dip in aplle slices and fry it as a pancakes. ✨ Silk Tofu Chocolate Pudding Simply combine in a blender silk tofu + cocoa + sugar + melted chocolate. Pour it in jars and let it sit in a fridge for an hour. Enjoy. ✨ Fruit Salad with mayonnaise tangerine + apple + raisins + peanuts + hard-boiled eggs + sugar + mayonnaise Simply combine everything in a bowl and let it sit a fridge for an hour to soak the taste. Then eat within 3 days no longer. ✨ Stuffed Shiitake Mushrooms 1) Mix in a bowl - mayo + canned tuna + chopped leek + chopped Shiitake stamps + black pepper. 2) Place tightly on the mushroom caps and sprinkle with black pepper. 3) Bake it until golden brown on top. I baked it in an air-fryer at 175°C for 20 min.
