這一集是 Claudia’s Kitchen Lab 的原味港式蛋撻試作版。 這次我先做半份量,測試港式蛋撻最基本的兩個重點: 一個是塔皮要不要夠酥,另一個是蛋奶餡能不能烤得滑順。 這不是三種口味版本,這一集先專心做原味。 我會從塔皮開始,使用冷奶油和粉類拌出粗砂狀,再加入蛋液和香草精成團。 內餡則是用熱水、細砂糖、雞蛋、蒸發奶和香草精,做成簡單的原味蛋奶餡。 這次也會觀察幾個重點: 塔皮厚度會不會太厚? 蛋奶餡表面是否滑順? 烘烤後的口感是不是接近港式蛋撻的感覺? 如果你也喜歡這種家常甜點試作,記得幫我按讚、訂閱。 也可以留言告訴我,你喜歡港式蛋撻的塔皮厚一點,還是薄一點? 食譜份量|約 10 顆 塔皮材料: 中筋麵粉 166.5g 糖粉 46.5g 鹽 1/4 小匙 冷奶油 116.5g 蛋液 12–13g 香草精 3/4 小匙 蛋奶餡材料: 熱水 150ml 細砂糖 56g 雞蛋 2 顆 蒸發奶 40ml 香草精 1/2 小匙 烘烤參考: 190°C / 375°F 約 20 分鐘 關火後靜置 5–10 分鐘 #港式蛋撻 #蛋撻 #EggTart #HongKongEggTart #家常甜點 #ClaudiasKitchenLab #烘焙試作 #原味蛋撻 This episode is my first test batch of original Hong Kong-style egg tarts. I started with a small batch to test the two most important parts of this dessert: a flaky, buttery tart shell and a smooth, silky egg custard filling. This is not the three-flavor version yet. For this first episode, I wanted to focus only on the original flavor and see how the crust thickness, custard texture, and baking time turned out. The tart shell is made with cold butter, flour, icing sugar, egg, and vanilla. The filling is a simple egg custard made with hot water, sugar, eggs, evaporated milk, and vanilla. In this test, I’m checking: Will the crust be flaky enough? Will the custard set smoothly? Is the tart shell too thick or just right? And does it taste close to the Hong Kong egg tarts I had in mind?
