Welcome back to a new vlog! Cooking a delicious Spring dinner with you (recipe below) I can confirm it's absolutely delicious. We had a nightmare with the vegetables! ONE PAN SPRING CREAMY CHICKEN RECIPE Chicken thighs / or leftover roast chicken 1/2 Onion 1 full garlic Handful of Tenderstem 1 Leek Cavalo nero 3 tbsp Creme fraiche Sprig of Fresh thyme 1 Chicken stock cube If you don't have leftover chicken start by browning chicken thighs on a high heat turning once. Once browned set these aside for later. Into a casserole dish add finely chopped onions and garlic cook until soft. Roughly chop your vegetables and add to the pan. Meanwhile bring your vegetable stock to a simmer in a small pan. Stir in the stock and herbs into the casserole dish and leave to soften for 10-15 minutes. Add the chicken thighs and bring to a low simmer. Cover with a lid and cook in the oven 160 degrees for 20 minutes. Take the lid off and continue to cook for 10 minutes. Stir in creme fraiche, simmer for a minute. Serve on it's own as a chunky soup style dish. Or pair with mini potatoes or crusty fresh bread.
