Gobi Manchurian l Restaurant Style Manchurian l Cauliflower Recipe l Appetizer l @GoanSpiceHouse #gobimanchurian #gobi #cauliflower #manchurian #partyappetizers #indiancuisine #vegrecipe #goanspicehouse #recipe #cooking #vegmanchurian INGREDIENTS: Cauliflower – 1 cup (thoroughly washed and cut) Finely chopped garlic – 2 tsp Finely chopped ginger – 1 tsp Chopped green chillies – 2 Chopped onion – 2 medium sizes Chopped capsicum – 1 medium size Red chili sauce – 1 tbsp Green chilli sauce – 1 tbsp Tomato ketchup – 2 tbsp White Vinegar – 2 tbsp Salt to taste Finely chopped Spring onions For Maida batter: Maida – ½ cup Corn flour – ¼ cup Salt - ½ tsp Cooking soda – ¼ tsp Water – 1 cup For cooking cauliflower Water – 2 cups Salt – ½ tsp For cornflour paste Corn flour – 2 tbsp Water – tbsp Oil (for cauliflower frying) – 2 cups For the Manchurian gravy – 2 to 3 tbsp METHOD/PREPARATION Step 1: Thoroughly washed and cut cauliflower into medium size pieces. Add 2 cups of water in a kadai, add salt, and boil water. After water boils add cauliflower and cook for 3 to 4 minutes on high flame or till 20% cooks. After the cauliflower cooks remove it from the water and keep it separately Step 2: Add Maida, cornflour, and salt in a bowl, and mix all ingredients well. Add a little water and make a smooth consistency batter. Add cooking soda, mix it well, and keep it aside for 15 to 20 minutes. Step 3: Heat oil in a kadai, once oil heats. Coat maid batter to 20% cooked cauliflower and deep fry till light golden. Once it's fry remove it from oil and keep it separate. Step 4: Heat oil 2 to 3 tbsp. add finely chopped ginger, garlic, and green chilies, and saute ginger and garlic till the aroma is realized. Add finely chopped spring onion and saute for some time. Add chopped onion and saute till translucent. add chopped capsicum and saute for some time on high flame. all vegetables should be sautés at high flame only and they should be crispy inside. Add all sauces (mentioned above) and mix them well. add cornflour paste (mentioned above). mix it well till the gravy becomes a little thick. At this stage, if you want more and thin gravy then add a little water and mix it well. add vinegar, and salt to taste and mix it well. add fired cauliflower mix it well in gravy, sprinkle finely chopped spring onion, and serve it.
