Cook 1 1/2 potatoes in boiling salted water over low heat for about 20 minutes. Grate 4 1/2 raw potatoes into a bowl. Place the raw potatoes on a clean dish towel and squeeze out as much liquid as possible. Collect the squeezed-out potato water in a bowl. Remove the potato mixture from the dish towel and place it in another bowl. Wait until the starch has separated from the potato water. Then drain the liquid from the potato water and add the grated potatoes to the settled starch in the bowl, and mix everything briefly. Drain the cooked potatoes, let them evaporate briefly, and press them through a spaetzle press into the bowl with the raw potatoes. Add the potato starch, season with seasoning salt, and mix everything well. Using moistened hands, form dumplings from the mixture. Place them in boiling salted water and cook until they float to the top. Then reduce the heat to low and let the dumplings simmer in the hot water until tender. Meanwhile, for the sauce, peel the onion and slice it into strips. Finely dice the bacon. Heat the oil in a pan and fry the onion and bacon. Clean the mushrooms, cut them into pieces, and add them to the pan. Continue to fry everything vigorously, season with salt and pepper, add a knob of butter, and fry the mushrooms until they begin to brown. Dust with flour, continue frying briefly, and deglaze with white wine. Allow the white wine to evaporate slightly. Then add the cream and let the sauce simmer gently. Chop the parsley and mix in.
