KOULOURAKIA 101
The first of a short collection of videos I’ve created with my yaiyia lil (grandmother) as a way to keep and remember some of our favourite recipes. This is a keepsake for my family but I’m glad I can also share this with anyone that wants some hints and tips when cooking delicious Greek food! Also featuring Papou’s garden lol he had FOMO ………….…………. ………….…………. ………….…………. Recipe: 250g softened butter 1 cup castor sugar 1 cup peanut or corn oil 1 cup cold white wine 1 tbsps vanilla extract or paste 6-7 cups of flour 1. Cream butter and sugar until fluffy 2. Add the cup of oil and vanilla. Once combined add the cup of wine 3. Transfer mix to a large bowl and slowly combine one cup of flour at a time until you reach reach a soft texture that isn’t sticky. The dough should come away from the bowl when it is ready. 4. Rest the dough for at least an hour before making biscuits. (Ideally a couple of hours) 5. This biscuit can be made in to any shape you desire so get creative or refer to the video for a more traditional shape. 6. Bake in a preheated fan oven at 170 degrees Celsius for about half an hour. Rotate trays half way through baking. 7. Store in a metal tin
