Forging a Matching Pair of Custom Kitchen Knives (FULL KNIFE BUILD) | Brut de Forge Slicers

In this video, I take you along for a full knife build as I forge a matching pair of custom kitchen knives from raw high-carbon steel down to the finished blades. This set features a high-performance 8-inch chef knife and a 6-inch utility kitchen knife, both featuring a distinct Brut de Forge finish that leaves the raw, hammered forge scale intact along the flats and spine. I take a deep dive into the technical execution of this build, including using fullering dies to manipulate the steel's height, hot-stamping the maker's mark, and proper thermal cycles (normalizing at 1650°F, 1500°F, and 1400°F) before quenching in Parks AAA oil. I also break down the geometry and metallurgy behind the "decarb layer"—that faint, gray transition line visible on the bevels after hand-sanding that marks the transition into the hardened steel core.
