Cassava Boba Tea 🧋 Tapioca Flour Pudding and Traditional Sri Lankan Dishes from Root to Recipe
Cassava season has arrived, and with it comes a burst of creativity in my Sri Lankan village kitchen! In today’s video, I take you from root to recipe, using freshly harvested cassava to prepare traditional dishes and one special twist — homemade cassava bubble tea made from sun-dried tapioca flour. Yes, real boba pearls made from scratch! ➡️ After days of rain soaking the land post-dry season, uncle’s cassava harvest has flourished just in time for the New Year. We start by finely grating cassava and purple sweet potatoes to create sweet sesame balls, caramelized with sugar — a rustic, earthy snack full of flavor. Then we grind and press the cassava on stone to extract tapioca flour, which is dried under the sun. With the leftover pulp, I make a creamy two-layer cassava pudding with jaggery, butter, cardamom, jackfruit, and thick milk. The taste? Pure comfort food. The highlight of the day: mixing homemade tapioca starch with cocoa powder to create chewy pearls for a traditional bubble tea. It’s a modern favorite made with natural ingredients straight from the garden — a blend of village roots and sweet indulgence. As the family prunes tea bushes under the morning sun, we prepare more cassava dishes. For teatime, fried cassava is served with coconut sambol and Maldive fish, lovingly hidden away from our mischievous pets by my mother. The kitchen fills with the aroma of red onions and the sounds of celebration as we prepare for the Sinhala New Year. ➡️ To cool down from the heat, I also made a refreshing berry and sago dessert, using pomegranate, jelly cubes, and honey-filled black berries from the garden. The guava tree blooms, the birds are gathering, and the colors of the New Year are everywhere.
