This combination is perfect for your daily meals, so please give it a try at home. 【 ⏰ Timestamps 】 0:00 Opening 0:10 ① Pork & Vegetable Miso Stir-fry 3:22 ② Tenkasu Lemon Miso Soup ■ ① Pork & Vegetable Miso Stir-fry 【 Ingredients 】(Serves 3-4) Pork loin (thick cut/for tonkatsu): 250g Cabbage: approx. 100g Onion: approx. 100g Bean sprouts: approx. 50g Potato starch: 1 tbsp Vegetable oil (or sesame oil): 1 tbsp 〈 Pork Marinade 〉 Salt: 1/4 tsp (approx. 1.5g) Sake: 1 tsp 〈 Miso Sauce 〉 Miso: 1.5 tbsp Sake: 1 tbsp Mirin: 1 tbsp Grated ginger (or garlic): 1 tsp Black pepper (for finishing): To taste 【 Instructions 】 Preparing the pork Cut the pork loin into 1.5 cm wide strips. In a bowl, thoroughly massage the pork with the 〈 Pork Marinade 〉 ingredients (salt, sake). Let it rest for 5-10 minutes to absorb the flavors. Chopping vegetables & preparing the sauce While the pork is resting, cut the cabbage into bite-sized pieces and slice the onion into 5 mm strips. Wash the bean sprouts and drain the water well. Mix all the 〈 Miso Sauce 〉 ingredients in a small bowl. Cooking the pork Lightly coat the pork with potato starch. Heat oil in a frying pan over medium heat, and cook the pork until both sides are lightly browned. Cooking the vegetables Turn the heat up to high. Add the onion, cabbage, and bean sprouts in that order, and stir-fry quickly. 💡 Point: The biggest trick here is to cook everything quickly over high heat so the vegetables don't release excess water! Finishing up Reduce the heat to medium. Pour in the mixed 〈 Miso Sauce 〉 and toss everything together well. Once the sauce coats the ingredients and adds a nice glaze, sprinkle with black pepper and it's done. ■ ② Tenkasu Lemon Miso Soup 【 Ingredients 】(Serves 3-4) Tofu: 1/2 block (1 small pack is recommended) Shimeji mushrooms: 1 pack Water: 600ml Hondashi (dashi powder): approx. 4g Miso: 3 tbsp 〈 For Finishing: Per serving 〉 Lemon juice: 1/2 tsp ~ to taste Tenkasu (Tempura bits): Generous 1 tbsp (Ichimi togarashi / chili flakes, optional) 【 Instructions 】 Heating the ingredients (Extracting umami) Place the tofu, shimeji mushrooms, water, and hondashi in a pot. Heat over medium heat and bring to a boil. 💡 Point: By slowly raising the temperature of the mushrooms from cold water, the umami components (guanylic acid) will dissolve thoroughly into the soup. Simmering Once boiling, reduce the heat slightly and let it simmer for about 10 minutes. Dissolving the miso After 10 minutes of simmering, turn the heat down to extremely low (or turn it off completely) and dissolve the miso into the soup. Finishing (Balancing acidity and richness) Serve in a bowl and stir in the lemon juice (1/2 tsp ~). Finally, sprinkle the tenkasu (generous 1 tbsp) on top and it's done. 💡 Point: The refreshing aroma and acidity (citric acid) of the lemon are sensitive to heat, so it is best to add it after serving in the bowl.
