The "bolo de véspera," or simply "as vésperas," as it is traditionally known, is distributed among the population during the celebrations of the Holy Spirit, namely on the Sundays of the Holy Spirit and Trinity Sunday. This delicacy is typical of the islands of São Jorge and Pico, belonging to the Central group of the Azores archipelago. As part of this research, we went to the island of Pico, specifically to the parish of Bandeiras, in the municipality of Madalena. We spoke with Ilda Costa, who shared with us her memories and how she makes this dough. The cake is distinguished not only by its consistency and flavor, but also by the so-called "chavões" – marks or decorations made with a wooden stamp (chavão), which contains engravings alluding to the Holy Spirit. The impression is made by pressing the chavão against the surface of the cake, thus leaving its characteristic visual record.
