Korea's Chicken Noodle Soup Is Better Than Ours
Chicken noodle soup means a lot of different things depending on where you’re from, but after a trip to Seoul, I’m convinced the best version might be from South Korea. In this episode, I’m recreating dak kalguksu, a deeply comforting Korean chicken noodle soup I had in Namdaemun Market’s famous Kalguksu Alley. We’re making a rich chicken broth, fresh hand-cut noodles, and building the bowl the way I remember it, with shredded chicken, fried tofu, scallions, sesame, gim, and a swipe of gochujang on the side. It’s simple, soulful, and one of the most memorable things I ate on the trip.
