Mix the chicken with garlic, oregano, vinegar, oil, olives, capers, caper brine, dates & bay leaves with 1tsp salt & a generous grind of black pepper in a baking pan 2. Preheat oven to 200°C 3. Whisk together the wine & molasses & pour over the meat. 4. Place in the oven and cook for 50 minutes, spooning the juices over the meat two or three times throughout, until the meat is golden brown on top & cooked through. 5. Remove from the oven, transfer everything to a large platter, sprinkle with some oregano, & serve. PEAR, BANANA AND DARK CHOCOLATE CRUMBLE 4 pears 4 bananas 150g dark chocolate For the topping: 50g butter (the sunflower oil sadly didn’t taste great!) 100g flour 75g rolled oats (optional) 100g brown sugar METHOD 1. Peel & chop pears & banana, cut up dark chocolate & place into dish 2. Combine topping ingredients 3. Just before place into oven add topping 4. Serve with double cream or ice cream GUACAMOLE RECIPE 4 avocados 6 cherry tomatoes Handful of coriander Juice 1 lime 1 red onion Generous tabasco Flaked sea salt Fresh chilli Dried chilli flakes Black pepper Olive oil METHOD 1. Add all ingredients & mix
