Coronation Chicken Recipe - Platinum Jubilee Edition

The coronation chicken recipe was devised to mark the coronation of Queen Elizabeth II back in 1952. This year marks 70 years old 'Lizzy' has been on the throne, the longest-reigning monarch in British history. I must admit to never having had coronation chicken until I made this dish. It is absolutely delicious. Poaching the chicken at a very slow bubble (low heat) is the secret to keeping the breast succulent. Boiling it would only dry it out.
