Add the oil and milk, and mix again. Sift in the flour, baking powder, vanilla, and salt. Stir until smooth. Lightly grease a pan with oil and heat it. Pour in a small ladle of batter and cook on low heat until bubbles appear on the surface. Flip and cook the other side until golden. I made only half the portion. Enjoy! 🍀 ● 04:45 — Sweet little gifts from my sister 🍬 ● 06:46 — Apple Cookies 🍎 ♡ Dough: 200 g butter or margarine (room temperature) 1 small glass vegetable oil 3/4 small glass yogurt 3/4 cup sugar 1 tsp baking soda 4.5 cups flour ♡ Filling: 3 large apples 1/2 cup sugar 1/2 cup chopped walnuts 1 tsp cinnamon ♡ Method: Grate the apples and cook them in a pan with sugar until lightly caramelized. Add walnuts and cinnamon, stir, and let cool. For the dough: combine butter, oil, yogurt, sugar, and baking soda. Gradually add flour and knead into a soft dough that doesn’t stick. Roll out the dough on a floured surface, cut into circles, place filling in the center, and fold the sides. Arrange on a baking sheet lined with parchment paper and bake at 180°C (350°F) for 20–25 minutes until golden. Once cooled, dust with powdered sugar. Enjoy! 🍀 ● 09:45 — Eggplant Lasagna 🍆 ♡ Meat filling: 2 tbsp oil 200 g ground beef 2 garlic cloves, crushed 1 cup tomato purée 1 tsp salt 1/2 tsp black pepper ♡ Béchamel sauce: 1.5 tbsp butter 1 tbsp oil 2 tbsp flour 1.5 cups milk 1/2 tsp nutmeg ♡ For the lasagna: 3 eggplants (sliced, soaked in salted water) 1/2 small glass olive oil 1 tsp salt 1 cup grated cheese ♡ Method: Sauté the ground beef in oil until the liquid evaporates. Add garlic and tomato purée, season with salt and pepper, and let simmer briefly. For the béchamel: melt butter with oil, add flour and cook lightly. Gradually add milk while stirring constantly until thickened. Season with salt and nutmeg. Drain and pat dry the eggplant slices, then bake at 190°C (375°F) for 10 minutes. In a baking dish, layer eggplant, béchamel, meat, and cheese. Repeat and finish with béchamel and cheese. Bake at 190°C (375°F) for about 25 minutes. Let cool slightly, cut, and serve.
