Heat oil in a pan and roast peanuts on low-medium flame until light brown spots appear. Do not over roast. 2. Add green chillies, curry leaves and mint leaves. Roast for about 10 seconds. 3. Add chutney dal (roasted gram dal / hurigadale) and roast for another 10 seconds. 4. Add tamarind and fresh coconut. Fry the coconut for just 5-7 seconds and switch off the flame. 5. Let everything cool completely. 6. Transfer to a mixer jar. Add shallots, salt and water. Grind to a coarse paste. 7. Add coriander leaves and pulse once or twice so that tiny green specks remain visible in the chutney. 8. Transfer to a bowl and adjust the consistency with water. 9. For the tempering, heat oil and add chana dal, urad dal and mustard seeds. Once they splutter, add curry leaves and dry red chillies. 10. Pour the hot tempering over the chutney and serve with idli, dosa, vada, appam or neer dosa. ✨ Secret ingredient: Shallots (Sambar onions) - They add a mild sweetness and give the chutney its authentic Bangalore tiffin center flavour.
