BBQ Smoked Potatoes au Gratin Recipe - Scalloped Potatoes Recipe. I know people get bogged down by the name of this dish... technically because this is potatoes with cheese; I should call it a potatoes au gratin recipe. But that would leave a lot of people scratching their heads, because they would just call it scalloped potatoes. Ingredients: 125g (¼ lb) bacon, diced 60 mL (¼ cup) flour 250 mL (1 cup) milk 500 mL (2 cups) 35% heavy cream 1 Kg (2 lb) baking potatoes, sliced thin 1 large onion, sliced thin 3-4 jalapeños, sliced thin 350g (12 oz) cheese that melts nicely*, grated or chunked 180g (6 oz) hard cheese (like parmesan), grated Salt and pepper to taste *pizza mozzarella, Monterey jack, Wisconsin brick, etc Method; Preheat your Pellet Grill / BBQ / Oven to 200ºC (400ºF). In a cast iron pan, render and brown the bacon over medium heat. Remove the bacon from the pan, and adjust how much fat is left - you need about 4 Tbsp. (add butter or other oil if you need to add more fat) Add the flour and cook, stirring, for one minute. Whisk the milk and cream into the pan, whisking constantly. When the sauce is smooth, bring to a simmer and cook to thicken slightly, one or two minutes. Stir in salt and pepper. Turn off the heat. In a really big bowl mix together the potatoes, onions, peppers, bacon, cheese and sauce. Pour this mixture back into the cast iron pan, and adjust the liquid if necessary. Grate Parmesan over the top. Place the pan on your grill and cook until the potatoes are tender, just over an hour or so.
