After that time, we remove the loin from the salt and clean it well. You will have noticed that there is liquid at the bottom; this is normal and you shouldn't worry, it's juices released during the chemical process that removes moisture from the loin. Another thing you'll notice is that the piece is slightly smaller than when we put it in the salt. It's also normal for it to shrink a little. Everything is fine. We clean the loin under running water to remove all the salt and sugar. Then we must dry it very well with a clean cloth or paper towels. We prepare the paprika along with the herbs. In my case, paprika and a mix of Provençal herbs. You can cure the loin with whichever herbs you prefer, but initially, we'll always use paprika as a base. Once we have the spice mixture, we coat, or rather, bread the loin. We press it down with our hands so that the spices adhere well to the meat. Once the loin is well coated with the spices, we cover it with a bandage. We cover the piece well and put it in the refrigerator. We'll leave the loin in the refrigerator for 21 days.
