With the cold winter season right around the corner, we decided to take advantage, while the weather is still warm enough and take Ollie on a hike! Im sharing one of my favorite Salmon recipes with you, Salmon pasta bowls! We are still enjoying this delicious Alaskan Salmon we caught at the Kenai this summer! Thanks for joining another video! BYEEEEEEEE Salmon Pasta Bowl Recipe: •4 oz of whole wheat pasta ( can sub in chickpea pasta if available for more protein) •5 oz asparagus, cut into thirds •1 (6 0z) salmon fillet, remove skin and cut into 8 cubes •1 tablespoon olive oil •Zest and juice of 1 lemon •¼ teaspoon salt •¼ teaspoon pepper •½ cup cherry tomatoes, cut into halves •½ avocado, cut into small pieces •Cooking spray -In a medium pot, cook noodles in boiling water according to package. -Transfer cooked noodles to strainer. In same boiling water, add asparagus. -Cook for about 2 minutes; remove from and rinse with cold water to stop cooking. -Heat a medium size pan over medium-high heat. Coat with cooking spray. -Cook salmon, turning pieces for about 2 minutes per side. -Now make your sauce: Whisk together olive oil, lemon zest and juice, and salt and pepper in a small bowl. -Combine pasta, asparagus, and sauce in a bowl.
