I visited Komatsuya, a tsukudani shop in Yanagibashi, Tokyo that has been making preserved foods for 140 years. Akimoto-san, the fourth-generation owner, walked me through how he makes kombu tsukudani, from soaking the dried kelp in the morning to cutting it and simmering it down over the day. We talked about the shop's history, his daily life and how he tries to see hard times as a chance to change something. His daughter is now joining as the fifth generation.
