Maids of Honour – Little Royal Tarts

These delicate little, short-crust tarts are filled with jam and a soft almond frangipani and were once known simply as “cheesecakes.” Henry VIII is said to have served them to his queens, and Elizabeth I was particularly fond of them. There is even a terrace in Richmond, just outside London, still known as Maids of Honour Row. This version comes from an old edition of Epicurean magazine, and as the author writes, “while this may not be one of the original versions, it is the one which I like most of all.” In this video I make both the traditional version and a gluten-free version, showing how to adapt the pastry using gluten-free flour and psyllium husk. The gluten-free tarts are slightly more delicate, but just as delicious. Maids of Honour are delicate little tarts with a short pastry case and a lightly sweet filling — simple, elegant, and perfect with coffee, tea, or for morning or afternoon tea. Though traditionally made as small tartlets, they can also be baked in one large pastry case and served in wedges.
