A delicious frozen dessert to eat and enjoy. And it's gluten-free! Ingredients 6 eggs 120 g sugar 1 tsp vanilla 140 g gluten-free flour mix + 1 g xanthan gum 1 tbsp honey (50 g) Extras Powdered sugar for dusting Preheat oven to 180 °C (350 °F). Process First, prepare a baking dish with greased parchment paper. Place in the refrigerator until the batter is set. In a bowl, place the eggs and begin beating. When it begins to foam, add the sugar in a drizzle, then the honey. Add the sifted flour in two batches, folding in with a spatula until combined. Place the mixture and smooth it out. Bake quickly at 180 °C (350 °F) for 12 to 15 minutes. It's ready when you touch it and it doesn't burn. As soon as it comes out of the hot oven, trim the edges. Prepare a clean, dry cloth and sprinkle with powdered or regular sugar. Place the Swiss roll upside down. Remove the parchment paper and sprinkle with sugar again. Roll it up in the clean cloth and let it cool. Fill with ice cream (it must be soft enough to spread on the roll). You can add some fruit! Roll it up and place it covered with plastic wrap in the freezer. Prepare an Italian meringue Once removed from the freezer, cover the roll with the meringue and burn the top.
