杏仁瓦片是所有人的最愛,堅果香氣,酥脆的瓦片,一口一口的停不下來。 曾經做過不同款配方還是這個來自法國甜點大師的分享令人愛不釋手也不釋口。 都是垂手可得的簡單食材,卻能創造出非凡口感。 前製作法也容易,唯獨烘烤的溫度和時間得掌握。 以往用層爐烘烤一盤需要的時間,跟現在用風爐三盤同時烘烤的時間幾乎相近,不禁感嘆風爐的厲害。 不過沒關係,一盤盤烤也行的,先將生杏仁麵糊全部鋪好後再依次烘烤即可。 部落格:https://janekitchenfun12.pixnet.net/b... 材料表:共58片 蛋白160g 三溫糖120g 上白糖120g 玫瑰鹽2g 香草豆莢醬1g 杏仁片500g 無鹽發酵奶油60g 低筋麵粉40g *烤箱以180℃預熱 風爐:第一階段:160℃/風1/15分鐘,第二階段:150℃/風1/3~5分鐘 層爐:160℃/12~15分鐘 罐子尺寸:85x65mm #jane的歡樂廚房
