Treacle Tart
Here is one my mother used to make. It was such a treat to come home from school to find the smell of baking as we came through the door. On Instagram at: / margaretsmakeandbake Recipe Name for Treacle Tart For the pastry case: 200g plain flour 100g butter 60g icing sugar Zest of 1 lemon 1 egg A little milk if needed Method for pastry: 1) Preheat oven to Gas 2 / 150’C 2) Butter 9 inch flan tin 3) Rub 100g butter into 200g flour 4) Sift in 60g icing sugar 5) Add zest of 1 lemon Mix in 1 egg and a little milk if needed 6) Pop into fridge for 30 mins 7) Roll out to fit flan tin 8) Prick all over the base with a floured fork 9) Bake for 15 to 20 mins 10) Cool completely 11) Roll out the rest of the pastry to a long strip. This will be used for the lattice top 12) Pop into the fridge to cool For the filling: 3 tbsp butter 2 tbsp double cream 2 large eggs ½ loaf bread Zest of 1 lemons 400g syrup Method for filling: 1) Preheat oven at Gas 4 / 180’C 2) Warm the syrup and melt the butter 3) To a bowl add all the wet ingredients and mix 4) Add the breadcrumbs and mix 5) Pour into the cooled pastry case 6) Add a lattice of pastry to the top using the cooled pastry (see my video to see how this is made) 7) Add a little egg yolk to the pastry top 8) Bake for 50 mins to 1 hour 9) Serve hot or cold.
