Eid Dawat Special Beef Pulao |Beef Yakhni Pulao Recipe | Eid recipe Beef Yakhni Pulao Beef Yakhni Pulao is a fragrant South Asian rice dish where rice is cooked in a rich beef stock (“yakhni”) with whole spices and tender beef. It’s lighter than biryani but deeply flavorful. Ingredients For the Yakhni (stock) 750 g beef (bone-in preferred) 1 onion, halved 1 whole garlic bulb or 8 cloves 1 inch ginger 1 tbsp salt 8 cups water Whole spices: 1 tbsp cumin seeds 1 tbsp coriander seeds 8 black peppercorns 4 cloves 2 black cardamoms 4 green cardamoms 1 bay leaf Small cinnamon stick For the Pulao 3 cups basmati rice (soaked 30 mins) 2 onions, thinly sliced ½ cup oil or ghee 2 tomatoes (optional) 2 green chilies 1 tsp cumin seeds Salt to taste Reserved beef + yakhni Method 1. Make the yakhni Add beef, onion, garlic, ginger, salt, spices, and water to a pot. Bring to a boil and skim foam. Simmer: Pressure cooker: 30–40 mins Pot: 1.5–2 hours Strain the stock and keep the beef aside. 2. Prepare the pulao base Heat oil/ghee. Fry onions until golden brown. Add cumin seeds, green chilies, and tomatoes if using. Add boiled beef and cook 5 minutes. 3. Cook the rice Add soaked rice. Pour in measured yakhni. The liquid ratio should be about: Rice:Yakhni=1:1.75Rice:Yakhni=1:1.75 For 3 cups rice, use roughly 5¼ cups yakhni. Taste for salt before covering. Cook on medium until water mostly dries. Cover tightly and steam (“dum”) on low heat for 15–20 mins. Serving Ideas Serve hot with: Raita Salad Shami kebab Pickle A common pairing in Pakistan is mint yogurt raita with sliced onions and lemon.
