Spaghetti Carbonara Recipe (Serves 4) The traditional recipe calls for pork jowl, or guanciale, which is a close cousin to pancetta (made from pork belly) and serves as a perfectly suitable alternative. Ingredients 450 g spaghetti 150 g cured pork (ideally guanciale or pancetta) 4–5 egg yolks 60 g Pecorino Romano cheese 2 tablespoons pasta water (from the spaghetti) Salt and freshly ground black pepper Instructions: Cook the spaghetti in boiling salted water according to the package directions until just tender, or "al dente." While the spaghetti is cooking, dice the cured pork into small cubes and fry them in a pan until golden brown. Transfer the cooked pork to a paper towel to drain the excess fat. In a bowl, whisk the egg yolks with 50 g of finely grated Pecorino Romano cheese. Add freshly ground pepper and two tablespoons of the pasta water, mixing until you have a creamy consistency. Drain the cooked spaghetti and add it to the bowl with the egg mixture. Add the cooked pork and mix well to ensure the spaghetti is fully coated in the sauce. Divide onto plates, season with more pepper, and sprinkle the remaining grated cheese on top. Be careful with adding extra salt; the cured pork, Pecorino, and salty pasta water already provide plenty of salt, so be careful not to over-salt! Tip: You can easily substitute Parmesan for the Pecorino. Done correctly, the egg mixture should not scramble when it hits the hot pasta. It should remain creamy and smooth.
