Ghormeh Sabzi: The Unrivaled Masterpiece of Persian Cuisine.

🪷 Gilani Ghormeh Sabzi (Gilan-Style Herb Stew) 🪷 Ingredients: 1 kg mixed herbs (cilantro, parsley, kabar (a local herb), and fenugreek) If fresh fenugreek is unavailable, use 2 tablespoons of dried fenugreek. 200 g beans (or adjust the amount according to the quantity of herbs) Chicken, as desired (a mix of chicken breast and thighs) 2 tablespoons tomato paste Lemon juice, to taste (you can also use dried limes instead) 7 sour plums (*Aloo-cheh*) or 2 tablespoons of sour plum paste (for this quantity of stew) 3 eggplants 3 tomatoes 🌺 Instructions: Finely chop the herbs and fry them. You can also add one chopped onion and fry it together with the herbs. Season the chicken and fry it lightly while still raw. Drain the beans that have been soaked beforehand, then sauté them briefly. Add the fried herbs to the beans, then pour in enough boiling water to cover the ingredients. Bring everything to a boil and let it cook over high heat for about 15 minutes. Reduce the heat to medium-low (not too low) and let the stew simmer gently. During cooking, stir in the tomato paste. If using fresh sour plums, add them at this stage. Allow the stew to simmer for 4 to 5 hours until it becomes rich and well-developed in flavor. At the end of cooking, add the lemon juice to taste. Meanwhile, fry the eggplants and tomatoes separately, then arrange them on top of the stew before serving. 🌺 Your delicious Gilani-style Ghormeh Sabzi is now ready to enjoy! #villagelife #cooking #persianfood #iraniancuisine
