Beef Wellington at HOME, The BEST dinner party special

This is the perfect recipe to WOW your friends with, or celebrate a special occasion. This one does take several minutes to put together, but the good news is that you can do all of the work the day before, and then just pop it on the oven. This makes it perfect for dinner parties. Simple Recipe Amount Ingredients 2.5# Center Cut Beef Tenderloin 2 Tablespoons Salted Butter 1# Mushrooms Thyme, Fresh 1 Ea Shallot, Medium 2 Tablespoons Olive Oil 2 Cloves Garlic, Minced tt Salt & Pepper 12 Ea Sliced Prosciutto 2 Tablespoons Dijon Mustard 1# Puff Pastry 1 Ea Large Egg tt Flaky Salt Procedure Using Kitchen Twine, tie tenderloin in at least 3 places, to retain its shape, and hold the folded end if applicable. Sear Tenderloin on all sides, and set aside until cool enough to handle. Then remove the twine. Brush Tenderloin with Dijon Mustard, set aside. Place Mushrooms, Thyme and Shallot in food processor and pulse until fine pieces. Place Mushroom mixture into the large pan with Butter and cook slowly until the liquid has evaporated and mixture browns. At the end, if the pan is dry, add Olive Oil and garlic, cook for 1 additional minute. Cover work surface with double layered plastic wrap. Lay the Prosciutto, slightly overlapping, in a 14"x7" rectangle. Spread the Mushroom Mixture (Duxelles) over the Prosciutto. Place the Tenderloin on the Mushroom Mixture and roll the Prosciutto tightly around it, using the plastic wrap to hold everything together. Twist the ends of the plastic wrap to secure the package, refrigerate for at least 30 minutes. Place your Puff pastry on the cleaned work surface and roll out to a 15"x 8" rectangle if needed. You need to make sure that your pastry is going to cover your Tenderloin with no gaps. Beat Egg in small container until fluffy. Place Tenderloin on closest edge of pastry, then brush the other 3 edges with egg. Gently but tightly roll the beef in the pastry. Crimp the ends with a fork, and pinch the long edge, folding it underneath the Tenderloin. Place onto lined baking tray and brush with remaining Egg. Cut small slits in the top, and add Flaky Salt if desired. Place into 400° preheated oven for 25-30 minutes. Remove and let rest for at least 8 minutes. Slice and Enjoy Responsibly.
