Biscuits are ground in a blender and poured with melted butter. We tight the cake mold with a food film, put acetate film inside. Pour the shortcrust pastry mixture into the mold. We distribute evenly, tamping with a glass. Send to the fridge for 30 minutes. Meanwhile, we will cook a chocolate mousse. Mix the yolks with sugar. Add 135 grams of cream. We put on a faint fire and cook until light thickening, constantly stirring. Remove from the fire and add melted chocolate. Cool mixture a little bit. In separate dishes, beat the remaining 135 grams of cream with powdered sugar to soft peaks. We combine the chocolate mixture with whipped cream. That’s all - mousse is ready. We lay it out into the mold and level it. Send to the fridge for 6 hours to freeze. Now we are going to make some glaze. We bring the cream to a boil, but do not boil at all. We remove from the fire and add chocolate. Thoroughly mix, pour glaze on our cake. Send to the freezer for 30 minutes. Take off the mold and a film. We decorate at our discretion, for example, berries as in my case. Mousse cake is obtained with a very delicate, silky structure and unusually saturated chocolate taste.
